Master Mayonnaise (The Cold Mother)
Classic stable emulsion using yolk lecithin and mechanical shearing.

Headnote
This is the “Mother of the Cold Kitchen.” By suspending microscopic droplets of oil within a water-based acid (vinegar/lemon), we create a creamy, shelf-stable fat that carries flavor. We use a blend of neutral oil for structure and olive oil for finish, ensuring the sauce isn’t bitter. Teaching Idea: The Standard Emulsion Ratio. A single large egg yolk can emulsify up to 7 ounces (200g) of oil if added slowly. Exceeding this ratio causes the sauce to “break” (separate).
Ingredients
The Base
- 1 Large Egg Yolk (room temperature)
- 15 g (1 tbsp) Dijon Mustard
- 10 ml (2 tsp) White Wine Vinegar or Lemon Juice
- 3 g (1 tsp) Diamond Crystal Kosher Salt
The Fat
- 200 ml (¾ cup plus 2 tbsp) Neutral Oil (Grapeseed or Canola)
- 50 ml (3 tbsp) Extra Virgin Olive Oil
The Adjuster
- 5–10 ml (1–2 tsp) Warm Water (if needed)
Mise en Place (Action Checklist)
- Tempering: Remove the egg from the fridge 30 minutes prior. Room temperature ingredients emulsify faster than cold ones.
- Stabilize: Place a damp towel under your mixing bowl to prevent it from spinning while whisking.
- Measure: Pour the oils into a vessel with a spout for easy pouring.
Method
Phase 1: The Yolk Base.
In a medium stainless steel bowl, whisk together the egg yolk, Dijon mustard, vinegar, and salt. Whisk vigorously for 30 seconds until the mixture is creamy, pale yellow, and slightly tacky.
Why: The mustard acts as a co-emulsifier and helps “grip” the first drops of oil.
Phase 2: The Nucleation (Critical Step).
Begin whisking the egg mixture continuously. Add the Neutral Oil drop by drop — do not pause the whisk between drops. Do not rush this stage. Once you have added about 2 tablespoons of oil and the mixture has thickened into a heavy cream consistency, you have established the emulsion nucleus.
Phase 3: The Stream.
You may now increase the oil flow to a thin, steady stream, whisking rhythmically. The sauce should become very thick. Switch to the Extra Virgin Olive Oil for the final addition to layer in the flavor.
Sensory Cue: The whisk should leave distinct trails in the sauce (ribbons) when lifted.
Phase 4: Adjustment.
If the mayonnaise is too stiff (jelly-like), whisk in the warm water one teaspoon at a time to relax the texture. Taste and adjust salt if necessary. Transfer to an airtight container immediately.
